The first show I was able to track down the source of, the 1949 Chesterfield Ethel Barrymore show. The second show says it’s from 1950 and 51, and it features the Crosby kids with Judy Garland, is this an edit of 2 broadcasts or...?

To some extent I suspect your confusion might arise because of the fact that the songs were used repeatedly in Christmas shows over successive years and a few might have actually been the same recordings.
The shows on the records (and there were several issues - see the list here https://www.discogs.com/Bing-Crosby-The-Greatest-Christmas-Shows/release/6158738).
were drawn from the two shows of 14th December 1949 and 19th December 1951, though edited.
It may be that a few of the songs originated from other earlier shows.

Ethel Barrymore was in the show on 21st December 1949 which does not feature on the record.

The Ethel Barrymore show does feature on the release I have I was just recording it onto my computer, although it does seem slightly edited. Although I was asking about the second show as it seems mashed up between shows, with the December 6th 1950 broadcast seems to be possibly mixed with the December 20th 1950 broadcast, but I’m not so sure.

For clarification the version I have has the December 21st, 1949 shows on side one, and then side two is what I thought possibly above.

You just mentioned one of my 2 favorite Bing Crosby Christmas radio shows. One of them is where he tells the story of The Small One and the other favorite I save for listening to on Christmas Eve itself is the Ethel Barrymoore guesting show, she and Bing were great together as witness in their color movie "Just For You". He also did a very good earlier broadcast, an hour long Christmas show with Orson Welles where he and Orson tell of The Happy Prince. Now that might have been a Kraft Music Hall, without looking it up, that would be my guess. I do remember it was a very good show with such a great version of the Happy Prince, might have been even better than the Decca record Orson & Bing did of it.
Now in just 2 weeks I'll be enjoying my annual Halloween Bing viewing of Legend of Sleepy Hollow. I just now completed recording a special Halloween edition of my Sounds Like Radio podcast where I featured Bing's songs from that Disney toon along with some great short scary tales from Boris Karloff and others. I'll be posting it soon. Last week posted a new show and have decided to post one different new show every week from now on, instead of 4 all at once for the month. OK, I looked it up, the show with Bing & Orson Welles and Happy Prince was called Radio Hall of Fame aka Philco Radio Hall of Fame. It was broadcast 12/24/44 and was an hour long show as I remembered.
